Yacon (Smallanthus sonchifolius)

Yacon is a species of perennial daisy, traditionally grown in the Northern Central Andes, Colombia and Northern Argentina.

Sometimes called a Ground Apple, it has a sweet refreshing taste that is similar to apple, watermelon, celery and pear, all in one! It does discolour (oxidise) quickly, so citrus is a perfect partner when eaten raw.

It can be eaten:

  • Raw, for example grated in a citrus salad

  • Chipped and baked

  • Made into a drink

How to grow:

It is easy to grow, reaching 5-6 ft tall. It is persistent but not aggressive. Harvest as needed by bandicooting. Plant tubers 4cm deep and 1m apart and mulch. Can start harvesting in 25 weeks.
